Chez moi <strong>&#224; SaltoBar, ils seront propos&#233;s &#224; la (belle et grande) carte.</strong></p><p>Notamment les <strong>gambas rojas de Palam&#243;s</strong> que j&#8217;ai spott&#233;es au large des c&#244;tes catalanes ou les <strong>navajas, couteaux de Galice</strong>, cuits aller-retour &#224; la plancha qui seront sublim&#233;s par un simple filet d&#8217;<strong>huile d&#8217;olive de la Sierra</strong>, un peu de <strong>piment&#243;n de la Vera</strong> et une pinc&#233;e de <strong>sel paillet&#233; d&#8217;Espagne</strong>. Apr&#232;s en toute honn&#234;tet&#233; je pense qu&#8217;il sera difficile de r&#233;sister d&#8217;encha&#238;ner sur la <strong>tortilla extra </strong><em><strong>suave</strong></em>, le <strong>cochinillo confit</strong> ou encore <strong>le calamar</strong> servi dans son petit pain <strong>mollete</strong> mignon &#224; croquer&#8230;</p></blockquote><p>Je n&#8217;en dis pas plus mais j&#8217;esp&#232;re avoir r&#233;ussi &#224; vous faire saliver.</p><p>Pour la soif: <strong>vins nature, bulles et bi&#232;res bien de chez nous</strong>. Because <strong>this adventure is as much yours as it is mine</strong>.</p><p>I was 15 the first time I found myself behind the stove. I was 18 when I very seriously thought: &#8220;One day, I&#8217;ll have my own restaurant.&#8221; Ten years later, I said let&#8217;s go!</p><blockquote><p>From Barcelona to Granada, from the Balearic Islands to Coimbra, from Lisbon to Porto&#8230; I met the very best producers. The ones behind those <strong>beautiful products from back home</strong>, the kind that&#8217;s hard to find here. <strong>At SaltoBar, they&#8217;ll all be featured on a (big, beautiful) menu</strong>.</p><p>Including the <strong>gambas rojas de Palam&#243;s</strong> I spotted off the Catalan coast, or the navajas,<strong> Galician razor clams</strong>, flash-cooked on the plancha and elevated with nothing more than a drizzle of olive oil from the Sierra, a bit of piment&#243;n de la Vera and a pinch of flaky Spanish salt. On the land side, I got my hands on a small-batch <strong>sobrassada from Menorca</strong>, served sliced to order, just like a stunning <strong>jam&#243;n from Seville</strong>.</p><p>I decided there would be no set menu. Except at lunchtime. So if <strong>crema catalana</strong> or <strong>torrijas,</strong> <strong>our ultra-comfort, indulgent take on French toast,</strong> catch your eye right from the start, no worries. Zero fuss here. But honestly, I think it&#8217;ll be hard to stop yourself from following up with the <strong>extra-suave tortilla</strong>, the <strong>confit cochinillo</strong>, or the <strong>calamar served in its adorable little mollete bun</strong>, dangerously good&#8230;</p></blockquote><p>I won&#8217;t say more, but I hope I&#8217;ve made you hungry.</p><p>For drinks: <strong>natural wines, bubbles, and beers from home</strong>. San Miguel from Spain or Imperial from Super Bock for Portugal &#127466;&#127480;&#129309;&#127477;&#127481;.</p><p>I say &#8220;we&#8221; because <strong>behind SaltoBar there&#8217;s also Christophe Juville, my partner</strong>. After I shared the project with him, we went on a proper crawl through my favorite Barcelona spots so he could really feel where I wanted to go with this. It clicked. l&#8217;ai cuisin&#233;e, je me suis rendu compte qu&#8217;une bonne salade tha&#239; ne se r&#233;sume pas simplement &#224; de la viande m&#233;lang&#233;e avec des herbes et des l&#233;gumes. C&#8217;est bien plus que &#231;a.<br>Tout commence par le choix de la viande : pour ma part, je privil&#233;gie l&#8217;entrec&#244;te de b&#339;uf. Son gras apporte une vraie gourmandise et donne beaucoup plus de relief &#224; la salade.</p><p>Ensuite vient un &#233;l&#233;ment cl&#233; : la marinade. Une fois la viande cuite, elle va d&#233;gorger et lib&#233;rer son jus. C&#8217;est l&#224; que tout se joue, car ce jus, m&#233;lang&#233; &#224; la marinade, va devenir une base d&#8217;assaisonnement incroyable pour la salade.</p><p>Puis arrivent les textures. Le riz torr&#233;fi&#233; est primordial dans cette recette, et pourtant souvent oubli&#233;. partager, soyons honn&#234;tes.</p><p>Dans mon frigo ?<br>Quelques pommes de terre, des choux de Bruxelles et une salade feuille de ch&#234;ne qui tra&#238;nait dans le bac &#224; l&#233;gumes. V&#233;ridique.<br>Ce sera donc l&#8217;accompagnement.</p><p>Il me restait <strong>&#224; </strong>peine deux heures avant l&#8217;arriv&#233;e des invit&#233;s : il fallait une recette simple, efficace et sans prise de t&#234;te.</p><p>&#192; la base, j&#8217;avais pr&#233;vu d&#8217;aller chez l&#8217;une de mes poissonneries pr&#233;f&#233;r&#233;es (celle en face de l&#8217;&#233;glise Jeanne d&#8217;Arc, Paris 13) pour acheter&#8230; des sardines.<br>Sardines grill&#233;es au barbecue = combo parfait.<br>Sauf que surprise, <strong>c</strong>e n&#8217;est pas la saison. Pas une sardine &#224; l&#8217;horizon ce matin-l&#224;.<br>On change donc de plan et on part sur un poisson entier.</p><p>Et l&#224;, le coup de foudre : une magnifique barbue de 1,7 kg.<br>Bon, clairement, ce n&#8217;est pas le m&#234;me prix que les sardines (81 &#8364; au total&#8230; haha).<br>Mais j&#8217;estime que c&#8217;est de l&#8217;argent bien d&#233;pens&#233;, et surtout que j&#8217;ai beaucoup de chance de pouvoir me le permettre.</p><p>Et puis, cuire un poisson entier sur l&#8217;ar&#234;te, c&#8217;est un syst&#232;me de cuisson g&#233;nial :<br>on garde la peau intacte, les ar&#234;tes font leur travail, et le collag&#232;ne nourrit la chair pendant la cuisson. R&#233;sultat : une cuisson parfaite, moelleuse, juteuse.</p><p>Bref. Oui, oui, des croissants. Et franchement, le r&#233;sultat est hyper surprenant.</p><p>D&#233;j&#224;, gros avantage : pas de farine. La p&#226;te feuillet&#233;e des croissants fait tout le boulot &#224; notre place et, une fois cuite, elle donne une texture compl&#232;tement dingue. Entre le g&#226;teau ultra fondant et le pain perdu de comp&#233;tition.</p><p>Le principe est simple : on imbibe des croissants dans un m&#233;lange lait + lait de coco, on les laisse bien se d&#233;tendre, puis on les assemble dans un moule avec des bananes caram&#233;lis&#233;es et flamb&#233;es au rhum, et du chocolat noir. Beaucoup de chocolat noir. Toujours.</p><p>Ce g&#226;teau, c&#8217;est vraiment le genre de recette freestyle. dispose-les dans un plat allant au four.</p><p>Dans une autre casserole, pr&#233;pare un roux : fais fondre 40 g de beurre, ajoute 20 g de farine et m&#233;lange bien.<br>Verse progressivement le jus de cuisson des coquillages en fouettant, puis laisse &#233;paissir &#224; feu moyen jusqu&#8217;&#224; obtenir une sauce lisse et nappante.</p><p>Ajoute la soubressade coup&#233;e en petits morceaux, neige &#224; Paris qui me pousse &#224; vouloir m&#8217;allonger sur un nid de pur&#233;e l&#233;g&#232;rement beurr&#233;e au comt&#233;, surmont&#233; d&#8217;un rago&#251;t de b&#339;uf &#224; la sauce bien r&#233;duite.<br><br>Les Inconnus avaient tort (pour ceux qui ont la r&#232;f) : pour faire un bon hachis parmentier, il ne faut pas juste du hachis et du parmentier, il faut bien plus ! Un peu de temps et beaucoup d&#8217;amour.<br>Apr&#232;s avoir essay&#233;, au fil des ann&#233;es, plusieurs recettes, plusieurs cuissons, plusieurs dressages et plusieurs go&#251;ts, j&#8217;en c&#8217;est vraiment un gros kiff &#224; la d&#233;gustation. Et en plus, c&#8217;est une recette super simple &#224; refaire ! Le plus dur, c&#8217;est de trouver un petit cochon de lait. Mais si vous vous y prenez &#224; l&#8217;avance avec votre boucher, ce sera facile. parle de ce cheesecake.</p><p>Je l&#8217;ai pr&#233;par&#233; un peu diff&#233;remment d&#8217;un cheesecake classique : sans cuisson au four. Et croyez-moi, &#231;a en vaut vraiment le d&#233;tour.</p><p>Tous mes amis (et ma famille) qui ont pu y go&#251;ter m&#8217;ont fait d&#8217;excellents retours.<br>Pour certains, c&#8217;&#233;tait m&#234;me le meilleur cheesecake de leur vie&#8230; dimension.</p><p>&#199;a tombe bien : pendant les f&#234;tes, les plats sont souvent encore plus savoureux accompagn&#233;s d&#8217;un bon jus.<br>Le jus de poulet, selon moi, est une base pour tout.<br>Le jus de poulet r&#233;duit est un produit rare&#8230; enfin, rare n&#8217;est pas vraiment le bon mot. Je dirais plut&#244;t que c&#8217;est un produit capricieux.</p><p>Au d&#233;part, ton plan de travail sera rempli d&#8217;ingr&#233;dients.<br>&#192; la fin, tu obtiendras tr&#232;s peu de nectar (oui, je parle bien du jus &#128516;).</p><p>Et pour moi, servir une viande ou un poulet r&#244;ti avec ou sans jus, ce n&#8217;est tout simplement pas la m&#234;me chose.</p><p>Faire un jus de viande demande un peu de temps&#8230; et surtout de l&#8217;amour.<br>Mais rien de compliqu&#233; : ma recette est assez simple &#224; r&#233;aliser. Je l&#8217;ai pr&#233;par&#233;e avec un reste de poulet r&#244;ti, mais on peut tr&#232;s bien le remplacer par de la chair &#224; saucisse, de la dinde ou m&#234;me du b&#339;uf (confit et effiloch&#233; &#224; l&#8217;avance).<br>Ce qui est fantastique avec cette mani&#232;re de r&#233;aliser la tourte, c&#8217;est le croustillant de la p&#226;te faite maison &#224; la sortie du four, le bon go&#251;t d&#8217;une farce bien assaisonn&#233;e, m&#234;l&#233; &#224; un merveilleux jus de poulet bien r&#233;duit, accompagn&#233; d&#8217;une poign&#233;e de salade l&#233;g&#232;rement acide.</p><p>En bonus, &#224; la suite de cet article, je vais poster sur mon compte Substack la vid&#233;o film&#233;e de cette recette. &#199;a pourra vous aider &#224; la pr&#233;parer, notamment pour les &#233;tapes un peu plus techniques, comme d&#233;poser la p&#226;te dans le moule, etc.</p><p>Bref, c&#8217;est parti, on passe &#224; la recette:</p>

assez longtemps pour savoir que la cuisine n&#8217;est jamais seulement une affaire de recettes.</p><p>Petit, je n&#8217;aimais pas vraiment l&#8217;&#233;cole. Je suis donc un adepte de la cuisine ib&#233;rique, et plus particuli&#232;rement de la cuisine franco-espagnole-portugaise.</p><p>Sur mon Substack, j&#8217;ai envie de te partager ce qu&#8217;on ne voit pas toujours.</p><p>J&#8217;ai d&#233;cid&#233; de m&#8217;y lancer car, depuis 5 ans, j&#8217;ai post&#233; plus de 800 vid&#233;os de recettes sur les autres r&#233;seaux, sans forc&#233;ment les d&#233;tailler ni prendre le temps de tout expliquer.<br>Parfois, on se concentre sur un assaisonnement pr&#233;cis, mais on oublie d&#8217;expliquer le reste. </p><p>Ici, je veux prendre le temps d&#8217;&#233;crire de A &#224; Z, pour qu&#8217;&#224; la fin ta recette soit la plus lisible et compr&#233;hensible possible.</p><p>Il est aussi vrai que j&#8217;ai longtemps offert mon contenu gratuitement. Je suis en plein travaux, mais pour l&#8217;instant le projet reste secret.
